Here's a recipe for sweet Caribbean fried plantains:
2 ripe plantains, peeled and sliced diagonally
2 tablespoons butter
2 tablespoons brown sugar
1/2 teaspoon ground cinnamon
Pinch of salt
1/4 cup water
Juice of 1/2 lime
Heat the butter in a large skillet over medium heat.
Add the plantain slices and cook for 2-3 minutes on each side, or until they are lightly browned.
Sprinkle the brown sugar, cinnamon, and salt over the plantains and stir to coat.
Pour the water into the skillet and stir to combine.
Cover the skillet and let the plantains simmer for 10-12 minutes, or until they are tender and the sauce has thickened.
Remove the skillet from heat and stir in the lime juice.
