Ingredients

  • 4 chicken legs or 8 chicken thighs

  • 2 tablespoons olive oil

  • 2 tablespoons brown sugar

  • 2 tablespoons soy sauce

  • 2 tablespoons lime juice

  • 2 tablespoons jerk seasoning

  • 1 teaspoon dried thyme

  • 1/2 teaspoon ground allspice

  • 1/2 teaspoon black pepper

  • 1/4 teaspoon cayenne pepper

  • Salt to taste

Preparation

In a small bowl, mix together the olive oil, brown sugar, soy sauce, and lime juice to make the marinade.

  1. Add the jerk seasoning, thyme, allspice, black pepper, cayenne pepper, and salt to the marinade and mix well.

  2. Place the chicken in a large resealable plastic bag or a shallow dish.

  3. Pour the marinade over the chicken, making sure that all pieces are coated.

  4. Seal the bag or cover the dish with plastic wrap and refrigerate for at least 2 hours or overnight.

  5. Preheat your grill to medium-high heat.

  6. Remove the chicken from the marinade and discard the remaining marinade.

  7. Grill the chicken for 10-15 minutes per side, or until cooked through and crispy on the outside.

  8. Serve hot with your favorite side dishes.
